detail of Malewa

1 • 4 pieces of dry malewa
2 • 1 cup pea nut paste (Ground nuts)
3 • 4 tablespoons ash (Optional)
4 • 1 tablespoon salt
5 • 5 liters of water

2 • Thoroughly wash the malewa and cut into pieces approximately 2 inces in length. Place into a pan of water and boil. If you choose to use the ash, add it at this point. Its role in the cooking is to help in the softening of the malewa thereby reducing the cooking time. Leave to cook for about one hour, adding water to enusre they do not dry out. By this time the malewa pieces should be softening
3 • Remove the malewa from the cooking liquid and if ash was used i the process, wash the malewa and disgard the water.
4 • In a clean pan, add water and prepare to cook the ground nut paste. Mix the ground nut paste with cold water and add to the pan.Add the cooked malewa and leave to simmer over low heat for atleast one hour. Add the salt and leave to simmer for a further 20 to 30 minutes until nicely thick. Add the salt too early before the nuts are cooked will cause the stew to thicken without it getting entirely cooked.
5 • No addotional spices or herbs are used in this recipe as the malewa has a very delicate aroma that would be masked if herbs like onion or garlic was used
6 • Malewa is best served with matooke or millet bread.
